Where Do I Begin?
Consider the atmosphere of your event -- is a buffet style appropriate?
Is there enough table seating for all your guests? Remember: Ribs & Brisket are hard to eat standing up!
If you choose a buffet, where will be be located in your home (or other venue). We recommend long table(s) for food that guests can access from both sides.
A good rule of thumb is to order 1 pound of meat for 4 adults, or perhaps 2 adults and 2 children.
A "slab" of ribs (usally 12 bones per slab) can serve up to 4 if you are serving addional meats.
A pint of slaw, potato salad, or beans will normally feed 3 to 5 adults. We find that most people eat larger servings of beans and potato salad compared to slaw.
If you are having more than one meat, estimate UP. Most people will get a regular size serving of ALL meats, even if they don't eat all of it.
Free food (especially ribs) does crazy things to people!! After one taste they will eat until an entire buffet is gone!
Do you want your meat sliced? Some people prefer the presence of an entire slab of ribs or a whole brisket (think Thanksgiving Dinner). Then again, carving BBQ is an art in itself (again with the Thanksgiving Turkey). We would be glad to slice any or all of your meats for you.
Are you eating your order right away, or later that day or week? We can have your order prepared hot, cold, or frozen (to keep from spoiling).
Place eating utensils, napkins, and drinks at the end of the line! That way, guests won't have to hold them while they are trying to serve themselves.
